It’s Monday, which means meal prep day! For a girl like me I have more Tupperware than dishes because I’m always on the go, so this day is crucial.
My latest obsession? My hearty breakfast quiche. It gets the day going with something sorta fancy, but fast! Bake ahead of time and microwave for a quick bite before work or when you get to the office.
1/2 lb ground meat (I use beef, turkey, or pork)
1 small onion, diced
1 red pepper, chopped
1 green pepper, chopped
1 diced jalapeño (optional)
1 cup chopped mushrooms (optional)
Preheat oven to 400 and begin to prep crust. Beat 1 egg and pour into a bowl with melted ghee and flours. Mix well with your hands and press into a pie dish. Place in oven and bake 10 mins. While crust is baking brown meat and diced veggies at the same time. Remove crust from the oven and immediately spread browned meat into the crust. Beat 6 eggs together and pour over the quiche so dish fills. If needed, add more eggs to top it off.
Bake 30 minutes or until eggs set.
For extra spice, top with fresh salsa or Tabasco (and rev that metabolism!)
