3 Day Refresh: Day 2 & A Recipe!

Word/feeling of the day: invigorated. It’s weird, I know, cleanses are supposed to make you feel crappy, but I’m in a good place. Earlier today, I just wanted to throw in the towel and throw down on some udon noodles, but tonight I’m starting to feel like myself again, it’s great!

And, I even created a recipe with the compliant ingredients and had it for dinner, talk about getting my mojo back! So here’s to day 3 tomorrow and until then, here’s a recipe for you!

Zesty Paleo Coleslaw

1/4 head red cabbage, sliced & diced thinlyIMG_8332
1 1/2 cup shredded carrots
1/2 bunch cilantro, finely chopped
1/2 bunch green onions sliced
3 T olive oil
1 T Dijon mustard
1 T liquid aminos
1 tsp ginger
1/2 tsp white pepper
Pinch of salt
1/4 c Slivered Almonds

Mix cabbage, carrots, green onions & cilantro in a large bowl, set aside. In a smaller bowl whisk together all other ingredients except almonds. Immediately pour over veggie mix and combine well. Cover the dish and refrigerate at least 2 hours (the longer it sits, the better it tastes!). Serve chilled with almonds on top.
