Caesar Salad: Whole 30 tested, paleo approved.

That’s right, you read the title right…Whole 30 & Paleo Caesar dressing…because when you eat healthy sometimes you just really miss creamy goodness. Or at least I do!

I put this on spinach, kale, or raw zucchini noodles for a green & healthy fat packed side–or add on your favorite protein (mine is lemon pepper chicken with this) and you’re set for a clean, diet friendly lunch!

Paleo Caesar Dressing

Makes 4 servings

3/4 cup raw cashews

3/4 cup unsweetened almond milk

1 TBS Dijon mustard

2 anchovies (about 1/4 can in olive oil)

1 TSP diced garlic (about 1 1/2 cloves)

1 TBS lemon juice

Pinch of salt

Cracked pepper to taste

  1. Soak cashews in water for at least an hour. Drain.
  2. Place all ingredients in food processor or blender (I use a magic bullet) and blend.
  3. Taste and add salt/pepper as needed. If too mild add another anchovie.

That’s it! This keeps about a week…who would have thought salad dressing could be so easy!?
