I’ve done it. I’ve solved the mystery. It is possible to have fish at work. (Hold the applause, please).
I should have listened to my college roommate for this secret trick: lox. That’s right, smoked salmon. No heat = no stink. (Ok, now applaud).
And…to top it off and get those awesome healthy fats & omega 3s after a big workout, here’s a great salad recipe you can keep in the fridge and put together at the office.
Omega 3 Office Salad
makes 2 or 3 salads
- Organic Girl Super Greens Mix (or other mixed lettuce/spinach)
- 1 pack lox / smoked salmon
- 1 cucumber
- 1 avocado
- 1/2 onion
- 1 TBS sesame seed
- 1 TBS olive oil
- 1 tsp sesame oil
The night before/morning of dice cucumbers, onions and avocado (pro tip: squeeze a little lemon juice and place in a container with the oils and seeds. Pack up the salad, container & the lox and bam! Fits in a lunch box (with room for snacks!)
When you get to work and you got a rumbly in your tumbly grab some lettuce (I use about 1/4 container) and slice up 1/3 – 1/2 the salmon with the same amount of oils and veggies. Dig in & save what’s left for (it keeps for 3-4 days).
