Simple Paleo Chicken Salad

This week, I needed a recipe so simple, the instructions would only be one sentence.

Things are crazy at our house this week with prepping for our move, so when I was doing my meal planning I wanted some grab and go recipes.  I immediately thought, I’ll make a batch of mayo and prep some salad / picnic staples for this week with some leftovers (saved me a grocery trip too!).


This Paleo Chicken Salad is a crowd-pleaser and is super easy, and a great way to use up some leftovers.  If making the full recipe, I usually buy a rotisserie chicken (I love the lemon chicken from the deli counter!) so it is nice and moist (yeah, I said it..).  But, if you don’t like the mess and the lighter side, a 4-pack of chicken breasts works just fine.  This time around, I actually made a half, because someone…cough, cough, Hubby…decided to eat 1/2 my chicken. HAH!


Paleo Chicken Salad

makes 6 servings.

Ingredients:

  • 1 rotisserie chicken, diced and de-boned
  • 1 large onion, diced
  • 1/2 celery bunch, diced
  • 1/2 cup mayo (or if you like lighter, a little less)
  • squeeze of lemon juice
  • 1 tsp salt
  • 1 tsp pepper

Throw all the ingredients in a bowl…and stir!


Refrigerate up to a week, and eat over salad…crackers…sandwich…cucumbers, or just plain!


If you are following 21 Day Fix, this is 1 red, 1 teaspoon, 1 green (per serving) if over some cucumbers or salad.  With bread, add a yellow!
