Grab-and-go has been the name of the game for me this week, and I have a severe weakness for deviled eggs…and needing some protein. Because, gains.
I made some clean eating mayo this week for some Paleo Chicken Salad and whipped up these eggs for some grab and go snacks. They are whole 30 compliant, paleo-approved, and 21 Day Fix-friendly ( 2 eggs = 1 red, 1 teaspoon). Like most of my recipes, this is also easy to duplicate.
makes 2 servings (8 egg halves).
- 4 hard boiled eggs (make it really easy and buy them pre-boiled!)
- 1 Tablespoon Mayo
- 1 Tablespoon Dijon Mustard (Dial this back if you don’t like a lot of kick)
- 1 Heaping Tablespoon Relish (I love wickles relish).
- Paprika, for garnish
Peel and slice the eggs in half, longways (skip this step by buying hardboiled eggs at the store). Remove the yolks and add into a bowl with the mayo, mustard, and relish. Mix until it has an icing-smooth texture. Return the yolks to the eggs, dividing evenly across the halves (no favorites now). Garnish with paprika on top.
